Eggs

All labeled as large eggs, I've never seen such a difference!
A miserable cold all week and Terry said this is what she craves when she has a bad cold.  Very, very good!

Chili-Cheese Dish 

3 Tablespoons butter
5 eggs
1/4 C plus 1 Tablespoon flour
1/2 t baking powder
1/2 t salt
1 (4 oz) can green chilies
1 Cup cottage cheese
8 oz. Monterey Jack cheese, grated

Melt margarine in 9" round GLASS pan (well, in real life I use a square one) Beat eggs lightly, add blended flour with baking powder and salt.  Add melted butter, green chilies and cheese, mix and pour back into the pan.  Bake @ 400 degrees for 15 minutes, turn oven down to 350 degrees and bake for 15 to 20 minutes more.

Freezes well.  Thaw and reheat at 325 for 15 to 20 minutes.

5 Tbsp. butter
8 eggs
7 Tbsp flour
3/4 t baking powder
3/4 tsp salt
1 4-oz can green chilis
1 1/2 c cottage cheese
12 oz Monterey Jack/pepper Jack

Check after 25 minutes at 350 as this adjustment makes a deeper recipe.  Casserole should not wiggle in the middle.
