Mostly Good : Some Bad

About 6 this morning.
Good:
          We need the moisture badly.
           It's Saturday and the first Saturday I haven't worked in m.a.n.y. weeks
          The big dogs really love it.
          Shoveled early and now the sun is peeking out.
          Ran a quick errand yesterday and now have stitching supplies on hand.
          Do not have to leave the house until Wednesday.
Bad:
          Leaves still on some trees, chain saws are out.
          Big wet dogs.
          Cable is out.  Not so bad really but you know... my fiber shows on Saturday at 6am.
Broken limb in front of Jeep and a hanging limb in back.

W.O.T.D.

I'm reading a very interesting book, Ella Minnow Pea.  There are many, many made-up words in this book so I am doing a lot of look-ups.  Here, however is a real word and I love itWhile it's not quite the same meaning, I like it a lot better than the trite "senior moment".

Have You?

I am fortunate to vote in the historic Utah County Court House.  It makes for a fabulous experience, all that marble makes me think of Thomas Jefferson!

I found a parking spot easily which was a good sign but after all it was just 11 o'clock.  People in line? Three (3) and Larry, who ripped out my kitchen cabinets, planted evergreens, set the new sink in place, he was right in front of me.    Behind the check-in/check-off table?  A regular customer at the store.

It's a wonderful opportunity.  Thank you ladies!

Last Day

Turned these guys in or rather I left them in the safe as there wasn't anyone to turn them in to. 
Someone once said "every key is a responsibility and a worry" and I would agree with that but as I look at this picture I realize that I can't tell you what the silver key is for!  Now that's pretty funny since I've had those keys for 2 1/2 years.

It was a good last day, a beautiful fall day and customers were not stressed or in a hurry or encumbered by husbands and children.  Well, most weren't.  Had a moment to answer a question and chat with a woman about her first attempts at crocheting around the burps.  A long time customer came in and I hope we will be able to get together at some point for some sewing or at least lunch.

Yes, it was a most enjoyable last day and I left just a little bit after my shift ended  It was tempting to stay because we were all having a good day together... but I did not.

Spicy Enchiladas with Pumpkin Sauce



This was a wildly appropriate dinner on Halloween!  I made it before I went to work, covered and refrigerated it for about 6 hours.  Since it was cold, I put the dish, uncovered, in the oven while it was preheating and then called it done when I could see the center bubbling.  Very good!

This is a modified recipe of Martha's which you can find here

Spicy Enchiladas with Pumpkin Sauce
1½ cups skinless, shredded leftover chicken
6 scallions, thinly sliced
3/ 4 cup cooked brown rice
Coarse salt and ground pepper
1 can (15 ounces) pumpkin puree
1 1/2 cups water
4 cloves garlic, peeled
1 can (4-oz) green chilies
1 teaspoon chili powder
6 - 8 corn tortillas (6-inch)
      1 ½  cups grated Monterey Jack cheese (6 ounces) divided

  1. In a medium bowl, combine chicken, scallions. Rice and ¼ cup cheese. Season generously with salt and pepper; set aside.
  2. In a blender, puree pumpkin, garlic, green chilies, chili powder, 1 teaspoon salt, and 1/4 teaspoon pepper until smooth.  Remove ½ cup and add to chicken mixture.  Add  1 1/2 cups of water and blend again.  Pour 1 cup of sauce in the bottom of an 8-inch square (or other shallow 2-quart) baking dish.
  3. Lay tortillas on work surface; mound chicken mixture on half of each tortilla, dividing evenly. Roll up tortillas; place, seam side down, in baking dish.
  4. Pour remaining sauce on top; sprinkle with cheese. Place dish on a baking sheet; bake until cheese is golden and sauce is bubbling, 25 to 30 minutes. Let cool 5 minutes before serving. 
  5. Note to self:  must use cheap and flavorful corn tortillas not the more expensive corn and wheat Artisan tortillas!
